Loaded Sweet Potato Fries

One of my ultimate staples!
Not even kidding when I say I eat this most days for lunch.
Super easy, super delicious, super nutritious.
Serves 1
Ingredients:
1 large sweet potato ( or two biggish yellow potatoes)
1 cup cooked black or kidney beans
1 Tbsp taco seasoning
1/2 an avocado
Sesame seeds
Sriracha
Vegan mayo
Method:
Rinse and cut one large sweet potato or two biggish yellow potatoes straight onto an oven tray, and bake in 200 celsius until crispy.
A fan oven or air-fryer should take around 30 minutes.
Just before that is done, I rinse my cup of beans well and fry them up with about 1/3 cup of water and the taco seasoning, mashing them a bit with a fork as they cook.
Taco seasoning:
1/2 teaspoon of cumin, paprika, salt, pepper, garlic powder, onion powder.
Let this go until the sauce is thick and you have a refried beans texture.
When your chips are done, plate them up and cover them in the fried beans - top with chunks of avocado, sprinkle with sesame seeds and add vegan mayo and sriracha to taste.
Also great with salsa and spring onions if you have it around, which I didn't.
Total guilt free healthy eating!
