Vegan Banana Muffins!

I seem to make these differently every single time, but everyone I know loves them so much I decided to finally get it down in a recipe.
I will say that it is very comfortable with substitutions and you can't really go wrong.
Ingredients:
6 over ripe bananas
3 cups wholemeal flour ( or any flour of your choice - spelt works well too )
1 cup rolled oats
2 Tbsp ground flax seeds
1/2 cup agave ( or sugar, maple, etc )
1 tsp baking soda
1.5 tsp baking powder
1 cup plant milk
1 tsp vanilla extract
Chocolate chips/nuts optional
Method:
Mash the bananas really well in a bowl - I use a whisk because you can really get it nice and liquid-y.
Add the agave, baking soda, baking powder, milk and vanilla extract and whisk together until you have a nice combined wet mixture.
Add in the flour, oats, flax and combine well with a wooden spoon.
If it's a bit dry add more milk until you have a nice thick sticky doughy batter.
Now add in your optional extras and mix them through.
Spoon into a greased muffin tin and bake at 180 degrees celsius for 20 minutes.
Winners every time!
Perfect when you have friends coming round and you need to whip up a quick, healthy, delicious treat, or for grab and go snacks, lunches, road/plane food etc - the reasons to make these are endless.
We buy extra bananas to put aside specially for these.
