Sweet Potato Black Bean Burgers...

These take a little forethought and prep work, (or just left overs :P ) but man oh man are the worth it!
Makes 6-8 patties.
Ingredients:
2 big baked sweet potatoes
1 - 2 cups organic cooked black beans (up to you have beanie you want them)
1 cup cooked brown rice
1/2 cup organic oats
1/2 cup nutritional yeast
1 tsp paprika
1 tsp garlic powder
bbq sauce (optional)
Method:
Bake the sweet potatoes in foil until soft and put to the side to cool.
Now I always make these when I have left over rice, but obviously you can make fresh rice beforehand.
And I always have cooked beans in the fridge too, but again, you can make fresh beans or just use a can of already cooked beans.
Peel the skin off the cooked sweet potatoes and mash them in a bowl.
Add the beans and rice and mix/mash everything together with a fork.
Add the spices, nooch (nutritional yeast) and oats - mix together.
Shape out the burgers with your hands ( the mixture is quite wet, but go with it ) and place on a baking sheet.
I like to smear bbq sauce over each one with the back of a spoon, this gives it a nice bbq burger crust.
Bake in 200 celsius for about 25-30 minutes, flip and coat the other side in bbq sauce too, then give it another 15 minutes in the oven.
The longer they cook, the more firm they will become, so go with what you prefer.
I love mine on a multi-seed bun, with sliced avocado and spicy sriracha mayo, and a side of homemade chunky style chips.
And if you are one of those pineapple topping loving weirdos like me, then try it with a pineapple ring! It's so good.
If by some miracle you have any left over, they will last a few days in the fridge, or better yet, cook up a big batch and freeze them for ease of use down the line.
