Plant-based Mac & Cheese

Or as we like to call it - Mac 'n Nooch...

This is the perfect go to meal when you are short on time,

as it only takes about 15 minutes to make.

It's a super satisfying, comfort food that feels naughty,

but is really healthy - so a great one for the fussy kids.

The magic ingredient is Nutritional yeast, so that's essential.

It was one of the first meals we tried when first going vegan and has become a staple in our house.

Using organic ingredients also really brings out the flavours,

so if you can, try to buy organic.

There are a lot of different variations to this dish out there on the internet,

with lots of different twists to it - so play around with it.

Serves 2-4 people

The basic recipe is:

2 Cups diced white potatoes

1 Cup diced carrots

1 Small onion

1 Teaspoon garlic granules ( you can use fresh garlic cloves too )

1 Cup of Nutritional Yeast flakes

1 Teaspoon of salt

Pepper to taste

And obviously the pasta of your choice

Method:

Boil the diced potatoes, carrots and onion in a pot - until soft.

While that boils cook your pasta.

Put the Nutritional yeast, salt, pepper and garlic granules in a blender,

with the cooked potatoes, carrots and onion,

together with a cup of the water you cooked them in.

Blend, pour the sauce over the cooked pasta and serve!

It's that simple. Minimal effort for maximum satisfaction.

You can add other spices like turmeric or paprika.

You can add red peppers or jalapeños.

You can add hot sauce or ketchup.

The variations are limited only by your imagination.
